Spiced carrot & lentil soup Recipe
Ingredients:-
 
  • 2 heaped tsp cumin seeds
  •  
  • pinch chilli flakes
  •  
  • 600g carrots , washed and coarsely grated
  •  
  • 140g split red lentils
  •  
  • 1l hot vegetable stock
  •  
  • 125ml milk
  •  
  • Crème fraiche and Bread to serve
  •  
  • Makes 4 servings. I usually put some in the freezer.
  • Spiced carrot & lentil soup
    Directions:-
     
  • Dry fry cumin and chilli for around 1 minute
  •  
  • Add carrots, lentils, stock and milk. Bring to boil and simmer for 20 mins
  •  
  • Whizz with hand blender/processor until smooth or leave chunky (OH prefers it whizzed)
  •  
  • Stir in Crème Fraiche if eating straight away
  •
