Mom's Zucchini Bread Recipe
I have no idea where my mom got this recipe for zucchini bread. All I know is she made it a lot growing up. This was my first time making it myself. It came out like I remember but I left out the nuts. My favorite way to eat it is covered in cream cheese. I can transform anything healthy into something bad.
Ingredients:-
 
  • 3 eggs
  •  
  • 1 3/4c granulated sugar
  •  
  • 3/4c vegetable oil
  •  
  • 1/4c milk
  •  
  • 2tsp vanilla
  •  
  • 3c all purpose flour
  •  
  • 1tsp baking soda
  •  
  • 1tsp salt
  •  
  • 1/2tsp baking powder
  •  
  • 2tsp cinnamon
  •  
  • 2c shredded zucchini, well packed
  • Mom's Zucchini Bread
    Directions:-
     
  • Heat oven to 350f and grease 2 9x5 pans.
  •  
  • Shred zucchini, using either a box grater or food processor.
  •  
  • Combine all wet ingredients add dry and mix well.
  •  
  • Fold in shredded zucchini.
  •  
  • Scoop batter evenly into loaf pans.
  •  
  • Bake about an hour, use the toothpick test to check for doneness.
  •  
  • Cool in pan a couple of minutes then empty pans onto cooling rack.

  • Cool about an hour before slicing.
